Hot Caramel Apples

Ingredients:

4 Large tart apples, cored
1/2 C. apple juice
8 Tbsp brown sugar
12 Red-Hot candies
4 Tbsp butter or margarine
8 caramels
1/4 tsp. ground cinnamon

Procedure:

Peel 3/4 inch off the top of each apple and place in slow cooker. Pour apple juice over apples. Fill the center of each apple with 2 Tbsp sugar, 3 candies, 1Tbsp of butter and 2 caramels. Sprinkle with cinnamon.

Cover and cook on low for 4-6 hours or until apples are tender. May serve immediately with whipped cream if desired.  Makes 4 servings.

Apple Butter

Ingredients:

4 qts. unsweetened applesauce
7 C. granulated sugar
1-1/3 C. brown sugar
5-1/3 T. cider vinegar
5-1/3 T. lemon juice
2 teaspoon. cinnamon
2 teaspoon. allspice
1 teaspoon. ground cloves

Procedure:

Combine all ingredients in a slow cooker and cover and cook 3 hours, stirring occasionally. Remove lid and continue cooking until excess liquid cooks down (turn to low if necessary). Cook for 5-8 hours. After cooking, seal apple mixture in hot jars and process in a hot water bath for a minimum of ten minutes. Or, seal tightly and store in refrigerator for up to one week. This recipe makes approximately 8-10 pints of apple butter, so if you don’t plan to use it immediately, share with friends and have them use it within the week.

Apple Brown Betty

Ingredients:

3 lbs. cooking apples (Granny Smith are fine)
10 slices of bread, cubed (about 4 cups)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
3/4 c. brown sugar
1/2 c. butter or margarine, melted

Procedure:

Cut peeled and cored apples into eight pieces and place in bottom of slow cooker. Combine the bread cubes, spices, salt, sugar and butter and toss together in a separate bowl until well blended. Place the bread and spice mixture over the apples. Place cover on slow cooker and cook on lowest setting for two to four hours. This recipe makes approximately six generous servings.

Apple Coconut Crisp

Ingredients:

4 large Granny Smith apples, peeled & coarsely sliced (about 4 cups)
1/2 cup sweetened flaked coconut
1 tablespoon flour
1/3 cup brown sugar
1/2 cup butterscotch or caramel ice cream topping (fat-free is fine)
1/2 teaspoon cinnamon
1/3 cup flour
1/2 cup quick rolled oats
2 tablespoons butter or margarine

Procedure:

Combine apples with coconut in the slow cooker. Add 1 tablespoon flour, 1/3 cup brown sugar, and cinnamon. Drizzle mixture with the ice cream topping. Combine remaining ingredients in a small bowl with a fork or pastry cutter and sprinkle over apple mixture. Cover and cook on high for 2 1/2 to 3 hours, until
apples are tender. Serve warm with vanilla ice cream or whipped topping if desired.

All Day Macaroni and Cheese

Ingredients:

8 ounces elbow macaroni, cooked and drained
4 cups (16 ounces) shredded sharp Cheddar Cheese
1 can (12 ounces) evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper

Procedure:

Place the cooked macaroni in crockpot that has been sprayed with a nonstick cooking spray. Add all of the remaining ingredents, except 1 cup of the cheese, mix well.

Sprinkle with the remaining 1 cup of cheese and then cover and cook on low setting for 5 to 6 hours or until the mixture is firm and golden around the edges. For best results, do not remove the cover or stir until it has finished cooking.

All Day Crockpot Wonder

Ingredients: 

2-3 lbs. boneless chuck, cut into 1 inch cubes
1/2 c. flour
1/4 c. butter
1 onion, sliced
1 tsp. salt
1/8 tsp. pepper
1 clove garlic, minced
2 c. beer (preferrably a full-bodied, not light beer)
1/4 c. flour

Procedure:

Coat beef cubes with the 1/2 cup flour. Brown in melted butter and drain off excess fat.
In slow cooker, combine browned meat with onion, salt, pepper, garlic and beer. Cover and cook on low 5-7 hours (all day) until meat is tender. Turn slow cooker to high. Dissolve remaining 1/4 cup flour in small amount of water. Stir into meat mixture, and cook on high 30-40 minutes. Serve with rice if desired.

Sixteen-Bean Soup

Ingredients:

1 package Sixteen-Bean Soup
3 bay leaves
1 tablespoon crushed oregano
2 cans fat-free chicken stock

Enough water to cover:
3 stalks celery chopped
3 carrots diced
1 large onion chopped
3 cloves garlic sliced
1 pound turkey Italian sausage sliced
2 cans stewed (or diced) tomatoes

Procedure:

Combine the first five ingredients (liquid should cover mixture by 1″-2″) in slow cooker. Cook on high for two hours. Add remaining ingredients and turn down cooker to low and cook for additional three hours.

For additional heat, add cayenne or crushed red pepper when adding second set of ingredients. Serve as a side dish or as a complete meal or over rice.

White Bean Chili

Ingredients:

1 pound ground beef (browned and fat drained)
1 pound ground turkey (browned and fat drained)
2 onions, medium chopped
4 garlic cloves, minced
3 bell peppers (green or red or a combination)
2 14.5-ounce cans of chicken or vegetable broth
1 15-ounce can of garbanzo beans (drained and rinsed)
1 15.5-ounce can of butter beans (drained and rinsed)
1 15-ounce can of black-eyed peas (drained and rinsed)
1 15-ounce can of navy beans (drained and rinsed)
1 4-ounce can of chopped green chilis

3 tsp ground cumin
2 tsp ground oregano
2 tsp paprika
2 Tbsp chili powder
1.5 tsp salt
1 tsp pepper

Procedure:

1. Mix all ingredients in slow cooker. Mix well to combine.
2. Cover slow cooker and cook on low for 8-10 hours.

This recipe is great with cornbread or crusty rolls to make it a meal!

Cheesy Chicken Casserole

Ingredients: 

1 can cream of mushroom soup
1 can cream of broccoli soup
1 can broccoli cheese soup
2 pkgs chicken breasts (boneless, skinless)
1 can mixed vegetables (any variety you like)
1-2 T tapioca as a thickening agent
1 cup shredded cheddar cheese

Procedure:

Dice chicken and season with salt and pepper. Pour all three cans of soup over chicken in slow cooker and stir well. Cover and cook on low about 4-6 hours.

About an hour before serving add mixed vegetables, cheese and tapioca. Serve over cooked white rice.
